Let’s Catch Up Again!!


So, we lost our football game in the playoffs.  I have some more great pictures of Nic, and of some of the great family and friends, that went to some of the games to help support him, to show you hopefully tomorrow.

I have been planning my Thanksgiving meal, still.   Besides having the turkey, dressing, gravy, and mashed potatoes, here is a list of the rest of the goodies I am planning on making. 

This is a cheese ball that I am going to attempt this year.

  I just can’t resist!!  I have to try!

I always make cranberry sauce, although I think mom and I are the only ones who eat it.  But it’s easy and cheap!

 I usually make a layered jello salad to go in my clear glass bowl, but this year I am going to make a banana pudding trifle.

 Madison wants me to make plain salad.  This means lettuce and cucumbers with some croutons.  So I think I will try this salad and let her pick off what she doesn’t want.

Summer Salad


I am a big fan of summer salads.

Anything that you can throw together without turning the oven on in the summertime.

This is delicious! 

 
I found this salad on-line last week and had to try it.
 
The ingredients are very simple for this particular one.
 
Here is the recipe:
 
 
2 T extra virgin olive oil 
1 T balsamic vinaigrette
2 garlic cloves, pressed
7 c whole wheat spiral pasta (cooled)
3 c chopped spinach
1/2 c pitted and chopped kalamata olives
1/2 c crumbled feta cheese 
 
 Combine cooked pasta (cooled), spinach, olives and feta. 
Toss with the dressing, which combines the olive oil, balsamic and garlic.
 
 
 You  could also add some cooked and chopped chicken breast to this salad.

Spinach Salad Recipe


As I promised last week, here is the spinach salad recipe that my Aunt Barbara made at Grandma’s Dinner.

This is Aunt Barbara with my Mom, Nancy sitting on the stairs at the church. 

 

 In this recipe you can add as much of any of the ingredients that you want.  It’s all up to your preference.

Here are the ingredients:

Baby Spinach

Feta Cheese

Walnuts

Red Onion

Strawberries

Blueberries

Cranberries

Balsamic Dressing

Mix it all together and serve.

 It is delicious!!

Try it, I know that you will like it!!
