Oreo Pudding


This is what I call Oreo pudding.

It is delicious.

This is what the inside looks like.

It has crushed Oreos on the bottom, a cream cheese layer, then pudding, and to top it all off whipped topping.

I found this recipe on Pinterest.

1 regular package of Oreos

1/2  c. of butter

1 lg box of instant chocolate pudding
 
2-8 oz cool whips
 
8 oz. of cream cheese, softened
 
1 c. powdered sugar
 
Crush the package of cookies either with a food processor, or in a bag and a rolling-pin.  Save a 1/2 c. to sprinkle on top of dessert when it’s done.  Pour remaining crumbs in a 13×9 pan.  Melt butter and pour into crumb mix.  Stir it up good and press crumbs in bottom of pan to make a crust.  Make chocolate pudding according to package directions and let it setup in the fridge.  In a mixing bowl blend cream cheese until nice and smooth and then add powdered sugar, mix.  Then fold in 1-8 oz thing of cool whip.  Top Oreo layer with cream cheese mix, then pudding, then your last 8 oz thing of cool whip, and then sprinkle remaining Oreo’s on top.  Cover and refrigerate until ready to serve. 
 
You will make this over and over, it’s that good!

Food and Family/Pasta and Kids


My daughters were in a wedding recently, so we just couldn’t resist a photo-op.

One of their high school buddies got married.

Anytime all of my children are going to be home at the same time Mom and I have a dinner.

This time we had pasta.

Mom made her famous lasagna.

Recipe to come as soon as possible.

I made this Chicken Pasta Primavera.

It was very good.

Here is the recipe:

 

4 cloves chopped garlic

1 C cut up broccoli

1/2 C diced onion

1 C  bite sized carrots

1 C sliced zucchini

1 C sliced yellow squash

2 C  sliced white button mushrooms

1 chopped bell pepper

5 T  butter

2 T olive oil

1 1/2 lbs cooked whole wheat penne pasta

4 cooked and cut up, large chicken breasts

 

Sauce:

1 1/2 C  chicken broth

1 C  heavy whipping cream

1 C half-and-half

1 C grated parmesan cheese

basil leaves to taste

salt and pepper to taste

 

Cook all vegetables, a few at a time, until al dente in 4T of butter and the olive oil in your skillet on the stove top.

Then remove all the vegetables and make your sauce.

Pour your chicken broth in skillet, along with your remaining 1 T of butter for about 1 min.

Add whipping cream, half-and-half, grated parmesan cheese.

 Tear in your basil leaves.

Salt and pepper to taste.

Stir everything together at this point.

YUM

 

But the favorite dish that was made was a Oreo pudding dessert.

Oreo Cookie Recipe


This year for the 4th of July celebrations that we attended I made Oreo Cookie Bars.

Here are the ingredients that you need:

One 16 ounce package of Oreos

I started grinding up my cookies in a small food processor that I bought to make my morning shakes in, DO NOT use that!  The cookies were too much for the small machine to handle. 

Then I got out the big food processor and it was much easier for it to crumble the  cookies.  I made three batches of these for the three different celebrations that we went to over the holiday weekend and I would have to say that the chunkier the crumbles were better the cookie bars tasted to me.  So play around with it.  

The next ingredients are 1 bag of large marshmallows and 4 tablespoons of margarine. 

Dump the marshmallows in a microwave safe bowl and dot the butter on top.

Microwave them until the marshmallows are big and puffy.

Then add your cookie crumbles to your marshmallow and margarine mixture and stir.

Get out your 8X8 brownie pan and line it with parchment paper.  Then spray it with Pam non stick cooking spray.  Dump in your sticky cookie mixture.  Get another piece of parchment paper out and spray it with Pam.   This piece is for you to use to spread the cookie mixture out and your hands and fingers don’t stick to it.  Let this set in the pan for about 10 minutes and then cut it.  I pulled on the parchment paper to get it out of the pan and then cut it with my pizza cutter.

These are pretty good and as you can see very easy!!!
