For the past 4 or 5 years I have been making this “Easter Bunny Cake”.
It is never perfect.
It is always different.
But, it is a tradition!!
It is very easy to make.
You can use any cake mix you want.
Or, of course, you can make your favorite from scratch cake.
The ingredients are:
1 pkg cake mix
1 16oz container white frosting
1 8 oz can crushed pineapple (drained)
1 tsp grated lemon zest
1 14oz pkg coconut
For the eyes: brown M&Ms or Hershey’s Kisses
Nose and Teeth: what ever you can come up with.
Make your cake mix according to package directions.
Pour into 2 8″ round cake pans.
Bake according to package directions.
Let cakes cool.
While they are cooling, make you frosting.
Put frosting in a bowl, fold in lemon zest and pineapple.
When cakes are cool.
Cut one of the cakes to look like a basketball.
The put it together to look like a bunny face with a bow tie.
You can decorate this bunny any way you want.
Kennedy, my 3-year-old granddaughter, is going to LOVE this guy!!
